| Paellas, valencian
Paella is cooked in a wide, flat pan called a paellera, and is usually prepared for two people. Although Spaniards swear it is best eaten at lunch time, you wont be making a culinary blunder is you choose it for your evening meal. Arroz a banda is another classic dish with rice and seafood, but in this case the seafood is serve abanda, meaning apart. Saffron yellow rice cooked in the seafood stock is the first course; then comes the plain boiled seafood with a pot of ali-oli, lemon wedges and crusty bread. This is the traditional way of preparing, but you can find variations. L'Albufera

| Casa de Valencia Pº Pintor Rosales, 58 Tel: 91 544 17 47 Metro: Argüelles | At Restaurante Casa de Valencia the art of paella making has been perfected over 20 years, and it is the dish of choice for most diners. Situated on the elegant Paseo del Pintor Rosales, the restaurant has an exclusive ambiance with friendly but unobtrusive waiters. Fellow diners are likely to be businessmen, visitors and groups of Spanish señoras enjoying an afternoon reunion. While prices are reasonable, the clientele tends to be smartly dressed. Its not really a place for shorts and flip flops. We started with a delicious Piquillos rellenos de marisco (7.50 euro), red peppers stuffed with succulent shellfish and served with a spicy tomato-based sauce which packed just the right amount of oomph. For our main course we opted for Paella marinera (11 euro), with mussels, shrimp, crab and prawns. Before being served, it was brought to our table for inspection. Topped with the most enormous gambas rojas Mediterranean red shrimp Ive ever seen, it was a true work of art. Average price: 30 euro Aparcacoches. | |
