León, castilian cuisine

The area of Old Castilla, up to Madrid, is tourist country, with massive castles, and ancient fortifications dating to Roman times and majestic cathedrals too.

It is known as the zona de los asados, th zone of roasts, baby lambs and suckling pigs, with white, and delicious tender meat. They are split lenghtwise and roasted in a big brick oven, and served with white potatoes, and crusty white bread. The best place is in Segovia, in the village of Sepúlveda, only a few hours' drive from Madrid.

There is also famous the charcutería industry, the cheese from the North, the morcilla from León (blood pudding with onions), or from Burgos (blood pudding with rice), the Chorizo de salamanca, good piernas (legs cured ham) and the method of escabeche,introduced by the Moors, a marinated way with a vinegar solution that partially cooks and pickles.
There is also a special cocido from this region, the cocido maragato, similar to Madrid, but served in a different way, and the Botillo, from the Bierzo area, in the west of León.
