Apple cider many years ago became the preferred drink in this region. Sidra, this ungasified natural ferment, is almost a ritual. FabadaIt is also a milk area, because of the unique milk that comes from the cows that fattened on the grassy of the Picos de Europa. There are famous desserts like
arroz con leche, a cream-rich milk rice pudding, Spain's best butter -mantequilla , and mixing cow, sheep and goat milk, a soft creamy cheese is wrapped in chestnut leaves and stored in humid caves. This genuine article is the queso de Cabrales, or Cabrales-Picón.
Fabada is the most important dish in Asturias. This area is also a bean and sausage country, and both are in the fabada, large dried white butter beans cooked with chorizo,tocino, bacon and morcilla. Plenty of energy...
If you prefer something lighter like fish, the rockly, inaccessible coastline of Asturias is plenty of large darkmeated tune, "bonito", "merluza" hake and shrimp, prawns.
Caldereta is a hotchpotch of shellfish and fish, asoup-stew of wonderful aomas, textures and flavours. Is delicious beans with clambs, fabes con almejas.
